As a single mother of a super active teenager there are times when I just honestly don't have time to get dinner on the table. I don't mind left overs but I would get tired of the same thing. Until I learned to remix my leftovers. I do this with alot of things but wanted to start off with the simplest. Chili.
Me and my daughter will together make a big pot of chili when I do this, my daughter already know that its chili week. Now before you start, just note this pot usually last me and my daughter two to three days and includes lunch.
#1 Of course we start off with a regular bowl of chili. If you are not sure how to make chili check out my quick and easy chili recipe. We always let people have there choice of sour cream, cheese, scallions and onions (cause I don't like them) to put in the chili.
#2 Chili Cheese fries this is great for a quick lunch in which all I have to do is cook some fries and heat up the chili. We add cheese, sour cream and real bacon bits.

#3 Chili Mac again this is a easy treat cooking noodles stir in cheese and sour cream and left over chili. This is a Hamburger Helper homemade style.
#4 Chili Frito pie simple left over chili fritos and cheese yeah its really that easy.
#5 Baked Potato with Chili this is honestly the fastest meal to make. I wash my potatoes, poked with fork, put it in the oven on 350. for about 15 to 20 min.
#6 Chili Dogs. A great American classic cooking the hotdogs and toasting buns and heating up the chili takes less than 20 mins. Easy meal.
#7 Tacos-Since I use black beans in my chili whats better than turning that into tacos super easy and quick.
